2 Lemons

Callo de Hacha (Scallops) Ceviche is the perfect recipe for days like this. So easy to make and the sweetness of the mango with the spice of the serrano pepper make a delicious mix of flavor.

STEP 1

Rinse and Pat dry the scallops with a paper towel.

STEP 2

Cut the scallops in small pieces, squeeze a lemon, cover and put in the fridge.

STEP 3

Chop in small pieces the rest of the ingredients and squeeze the other lemon, add salt and pepper.

STEP 4

Remove the scallops from the fridge and drain the lemon (do not rinse them with water). I like to do this so they don’t have a “fishy” taste.

STEP 5

Add the scallops to the rest of the ingredients, mix and eat with chips!
