Ingredients

Zucchini Blossoms

Onion

When I’m in San Miguel, Lolita helps me cook and she makes this delicious soup for the whole family, my son loves it and it’s also perfect for the colder days.

STEP 1

Remove the steam from the Flor de Calabaza and place it in cold water and gently rinse, then place over paper towels to absorb excess water. The blossoms are very delicate, handle with care.

STEP 2

Heat oil in a skillet over a medium high heat. Dice onion, tomato, and serrano pepper and saute for about 3 minutes or until onion is translucent.

STEP 3

Chop blossoms in small pieces, add them to the onions and tomato, add salt and pepper and cook for 3 more minutes or until the blossoms are fully cooked.

STEP 4

Warm up a comal or skillet and place the tortillas for a few minutes on both sides. If they are not properly warmed they will break.

STEP 5

Once the tortilla is warm, add oaxaca cheese, flor de clabaza, fold and put back on the skillet o comal for the cheese to melt.

SALSAS FOR MILANESAS

Ingredients

3 Tomatoes

¼ onion

¼ cup of beans with broth

2 tablespoons of pickle jalapeño broth

1 jalapeño pepper

Pinch of oregano

Salt

I know you are thinking beans in a sauce? This is actually the secret of this recipe! so simple and so flavorful! Try it in milanesas, tacos, tortas anything!

STEP 1

Add to the blender all the ingredients until smooth. I find this salsa tastes better when it is room temperature or a little warm. Let me know if you make it!

FIDEO CON ALBÓNDIGAS (PASTA AND MEATBALLS)

Ingredients

For the meatballs

Ground meat

1/3 onion

1 zucchini

3 garlic cloves

1 bunch of epazote

Salt

1/2 tsp oregano

Pepper

1/4 tsp cumin

For the tomato sauce:

1/3 onion

2 garlic

1 bunch of epazote

1 cup chicken broth/water

Salt

2 cups chicken broth

2 tsp avocado oil

1 zucchini

Directions

STEP 1

Meatballs

Place the meat in a bowl, grate the onion and zucchini, chop the epazote and add the rest of the ingredients, mix and make small meatballs. Set aside.

STEP 2

Tomato sauce

Boil the tomatoes. When soft add to the blender with a cup of chicken broth, onion, and garlic, blend until smooth.

STEP 3

Warm up a pot and add the tomato sauce, a bunch of epazote and salt. Let it boil. Add the broth and then the meatballs. While they are cooking make the fideo.

STEP 4

Fideo

Warm up a pan with 2 tbs of avocado oil (I like to use @choosenfoods ).

STEP 5

Add the package of vermicelli (I use @lamodernaus ) and keep stirring until it changes to a light brown color.

STEP 6

Add the fideo to the meatball broth, chop the zucchini and add it to the pot, cover and cook for 20 min on low heat or until the pasta is soft.

ORANGE HONEY GLAZED SALMON

Ingredients

Salmon

2 oranges (1 juiced and 1 sliced)

3 cloves garlic

Ginger

Honey

Water

Thyme

Directions

We bring you a delicious Orange Honey Glazed Salmon

STEP 1

In a hot pan add the salmon, salt and pepper it and cover.

STEP 2

Cook the salmon half way through.

STEP 3

For the glaze: mix juice of one orange with 1/4 cup of water and a tablespoon of honey. Set aside.

STEP 4

Add the juices of the marinate.

Press the garlic and grate the ginger into the pan and mix.

When it turns golden, add the orange juice and sliced oranges.

STEP 5

Cover and let it cook for 4 min. Take out the salmon.

Let the orange juice mixture boil until caramelized.

STEP 6

Add the caramelized orange juice mixture on the salmon.

And enjoy!

LEMON CHICKEN WITH ONIONS

Ingredients

Chicken breast

Onion

Thyme (you can also use rosemary)

Garlic

Lemon

You ask and we deliver! Here’s the recipe to our pollo al limón | Lemon chicken.

This is a simple but delicious recipe and it is so easy to make! Searing the chicken will give it some color. I personally don’t like “colorless” food and baking it with a dutch oven will make it super soft and flavorful. Who likes hard, dry chicken?! Not me.

STEP 1

Marinate the chicken for a couple of hours or overnight with lemon, garlic, thyme salt and pepper. Juliane the onions.

STEP 2

Next morning or couple hours later: Pre heat oven 350.

STEP 3

On a hot dutch oven, seared the chicken both sides. (I do not add oil)

STEP 4

Add the juices of the marinate.

STEP 5

Add 1/4 cup of water.

STEP 6

Add the onions and lemon slices on top of the chicken.

Transfer to the oven and cook for 1 hr. Serve it with your favorite salad or veggies!

PICKLED JALAPEÑOS

5 Jalapeño peppers

I love starting my morning with a green smoothie, and this one has a Mexican ingredient that I love, Nopal! It is full of fiber and it’s super healthy. I have a @vitamix and it blends the ingredients perfectly, if you don’t, you might want to use a colander, unless you like a chunky drink. Here’s how I make it:

On a hot comal, grill the habanero, onions, garlic and pineapple

STEP 2

Add to the blender the pineapple juice and charred ingredients and blend for a few second y listo! Enjoy this salsa with your favorite tacos!

CHOCOLATE NEST

1 Bar of each ghirardello white and dark chocolate.

1 Cup up of your favorite flakes for each chocolate bar.

Directions

Who else is ready for Easter? Make your own chocolate nests.

STEP 1

In a double boiler melt the chocolate.

STEP 2

Add melted chocolate to the flajes and mix until all the flakes are covered.

STEP 3

On a baking tray add a silicon mat and make little nests with a spoon.

STEP 4

Refrigerate for 2 hrs.

CHICKEN TINGA

Ingredients

Shredded Chicken

4 Tomatoes

1 Onion

1 tbs Marjoram

1 clove

Dry Chipotle pepper

2 cups Chicken broth

2 tbsp avocado oil

Directions

Chicken Tinga!

For this recipe you’ll need:

STEP 1

Boil the tomatoes and chipotle pepper.

STEP 2

Blend them and add salt ,clove and marjoram.

STEP 3

Cut the onion in thin slices and sautee them for a few minutes until translucent.

STEP 4

Add the mix of tomatoes and chipotle and let it fry, it will change to a darker color.

STEP 5

Finally, add the chicken broth and chicken and let it boil on low heat.

Serve over on tostadas with lettuce, avocado, cheese and salsa. AND ENJOY!

BURGER

Ingredients

Organic, 90% fat free ground meat (a good meat makes a big difference in any meal)

Tomato

Lettuce

Cheese (any cheese you like)

Pickled jalapeños (find my recipe on the website)

Who doesn’t love a good burguer? What makes a good burguer? the meat, the bun, the sauce? I think there’s a combination and every single ingredient matters. There are so many burger recipes but this one is so flavorful and it makes it different from any other burguer. The adobo with the caramelized onions are to die for, the meat is so juicy and flavorful. My adobo is made with a variety of different dry peppers, onion, tomato and spices. It pairs well with any protein and veggies. It’s really a staple in my kitchen.

STEP 1

Add Tümü adobo and salt to the ground meat, mix thoroughly.

STEP 2

Shape your burgers.

Grill them or cook them on a hot skillet (I do not add any oil since the meat has fat, the trick here is not to flip it until its fully cooked the bottom side, cook for about 2 min each side, if you have a thicker burguer, then cook it longer)

STEP 3

Warm up the buns in the oven and add the cheese to melt.

Assemble your burguer, add all the ingredients and enjoy!
