Hearts of palm ceviche ☀

Some of you have asked for a vegan recipe and this is one of my favorites for the summer. It is so fresh, flavorful and a total crowd pleaser. If you make it, let me know!

STEP 1

Chop all the veggies in small pieces, add lemon, salt and lots of cholula if you like it spicy… and simple as that! Enjoy! 😋

Spinach

Pecans

Sesame Seed

Mango

Lemon (Vinaigrette)

Orange (Vinaigrette)

Honey (Vinaigrette)

Avo oil (Vinaigrette)

Directions

Mangoes are one of my favorite fruits 😍 You will surprise your family and guests with this beautiful, healthy and delicious salad, plus it is so easy to make. The colors of this salad will make your table look beautiful and you know I’m all about that!

STEP 1 SPINACH

On a platter, make a bed of spinach, slice the mango in small pieces, add the pecans and sprinkle sesame seeds.

STEP 1 Vinaigrette

Whisk all the ingredients vigorously till it emulsifies. And enjoy! 😋 Let me know in the comments if you make it!

Ingredients

Chickpeas (You can use a can or make yours like I do, the flavor is much better!)

Cherry tomatoes

Artichokes in a jar

1/2 teaspoon dijon mustard (Vinaigrette)

2 tablespoons of avo oil (Vinaigrette)

1 lemon (Vinaigrette)

Salt and pepper (Vinaigrette)

Directions

Chickpea salad with cherry tomatoes and artichokes ✨

I love the mix of flavors in this salad! And my favorite part is to use fresh farm tomatoes!

STEP 1 CHICKPEAS

If you are using canned chickpeas, rinse them in water, same with the artichokes.

STEP 2 CHICKPEAS

Cut the cherry tomatoes in half.

STEP 3 CHICKPEAS

Add al the ingredients in a platter.

STEP 1 Vinaigrette

Whisk all the ingredients together until they emulsify. You can keep it in your fridge for 5 days.

NOTE

If you decide to cook your own chickpeas, clean and rinse the chickpeas, soak them in water overnight or at least 4 hours. Rinse them again, put them in a pot with enough water to cover them, add a piece of onion, bay leave and epazote (this one will give them a silky texture) let them boil in low flame for 1 hr, when they are soft add salt and cook them until they are soft.
