ORANGE HONEY GLAZED SALMON

Ingredients

Salmon

2 oranges (1 juiced and 1 sliced)

3 cloves garlic

Ginger

Honey

Water

Thyme

Directions

We bring you a delicious Orange Honey Glazed Salmon

STEP 1

In a hot pan add the salmon, salt and pepper it and cover.

STEP 2

Cook the salmon half way through.

STEP 3

For the glaze: mix juice of one orange with 1/4 cup of water and a tablespoon of honey. Set aside.

STEP 4

Add the juices of the marinate.

Press the garlic and grate the ginger into the pan and mix.

When it turns golden, add the orange juice and sliced oranges.

STEP 5

Cover and let it cook for 4 min. Take out the salmon.

Let the orange juice mixture boil until caramelized.

STEP 6

Add the caramelized orange juice mixture on the salmon.

And enjoy!

LEMON CHICKEN WITH ONIONS

Ingredients

Chicken breast

Onion

Thyme (you can also use rosemary)

Garlic

Lemon

Salt and pepper

You ask and we deliver! Here’s the recipe to our pollo al limón | Lemon chicken.

This is a simple but delicious recipe and it is so easy to make! Searing the chicken will give it some color. I personally don’t like “colorless” food and baking it with a dutch oven will make it super soft and flavorful. Who likes hard, dry chicken?! Not me.

STEP 1

Marinate the chicken for a couple of hours or overnight with lemon, garlic, thyme salt and pepper. Juliane the onions.

STEP 2

Next morning or couple hours later: Pre heat oven 350.

STEP 3

On a hot dutch oven, seared the chicken both sides. (I do not add oil)

STEP 4

Add the juices of the marinate.

STEP 5

Add 1/4 cup of water.

STEP 6

Add the onions and lemon slices on top of the chicken.

Transfer to the oven and cook for 1 hr. Serve it with your favorite salad or veggies!

CHICKEN TINGA

Ingredients

Shredded Chicken

4 Tomatoes

1 Onion

1 tbs Marjoram

1 clove

Dry Chipotle pepper

2 cups Chicken broth

2 tbsp avocado oil

Directions

Chicken Tinga!

For this recipe you’ll need:

STEP 1

Boil the tomatoes and chipotle pepper.

STEP 2

Blend them and add salt ,clove and marjoram.

STEP 3

Cut the onion in thin slices and sautee them for a few minutes until translucent.

STEP 4

Add the mix of tomatoes and chipotle and let it fry, it will change to a darker color.

STEP 5

Finally, add the chicken broth and chicken and let it boil on low heat.

Serve over on tostadas with lettuce, avocado, cheese and salsa. AND ENJOY!

BURGER

Ingredients

Organic, 90% fat free ground meat (a good meat makes a big difference in any meal)

Tomato

Lettuce

Who doesn’t love a good burguer? What makes a good burguer? the meat, the bun, the sauce? I think there’s a combination and every single ingredient matters. There are so many burger recipes but this one is so flavorful and it makes it different from any other burguer. The adobo with the caramelized onions are to die for, the meat is so juicy and flavorful. My adobo is made with a variety of different dry peppers, onion, tomato and spices. It pairs well with any protein and veggies. It’s really a staple in my kitchen.

STEP 1

Add Tümü adobo and salt to the ground meat, mix thoroughly.

STEP 2

Shape your burgers.

Grill them or cook them on a hot skillet (I do not add any oil since the meat has fat, the trick here is not to flip it until its fully cooked the bottom side, cook for about 2 min each side, if you have a thicker burguer, then cook it longer)

STEP 3

Warm up the buns in the oven and add the cheese to melt.

Assemble your burguer, add all the ingredients and enjoy!

AIR FRYER MILANESE

Ingredients

Chicken cutlets

Egg

Bread crumbs (I use rice flour crumbs)

Salt

Milanesas are super popular in Mexico at home, restaurants or you can find them in “torterias” (Mexican sandwiches). Coming home after school and having milanesas with salad and mashed potatoes made my day.

Thanks Mom! Also my mom would prepare a special salsa for Milanesas that is to die for (I will share another day). You can eat this milanesas in tacos or tortas with lots of avocado and salsa!

STEP 1

Scramble eggs in a bowl and add salt.

STEP 2

Place breadcrumbs in a bowl.

STEP 3

Dip the chicken cutlets first into the egg bowl and then to the breadcrumbs. Cover them completely on both sides.

STEP 4

Place the chicken cutlet into your air fryer and fry them for 20 min or until they are crispy (this might vary depending on your airfryer type).

SIDE NOTE

You can substitute dijon mustard for eggs and rice flour for bread crumbs. *These chicken cutlets will be dryer than fry cutlets.

CHICKEN WITH ROSEMARY, GARLIC AND LEMON

Ingredients

7 Chicken cutlets

2 Lemons

4 Garlic cloves

Rosemary leaves, minced

Avocado oil

Directions

This recipe is so easy and so delicious, you will please any crowd making this.

STEP 1

Salt and pepper the chicken.

STEP 2

In a ziploc bag, squeeze the lemons, press the garlic and ad the chopped rosemary.

STEP 3

Add the chicken into the ziploc bag, add more salt and pepper if necessary. Let it rest in the fridge for an hour or overnight. The lemon is going to make the chicken super tender.

STEP 4

Add avocado oil to a skillet, let it get hot and add the chicken.

STEP 5

Cook each side for a couple of minutes.

STRAWBERRY JAM

Ingredients

2 cups strawberries

3 tbs honey

Lemon juice

Orange zest

Orange juice

Directions

Easy and delicious! We add lemon juice instead of pectin. This jam will last in the fridge for a week. Enjoy with fresh sourdough or croissants.

STEP 1

Chop strawberries in small pieces.

STEP 2

In a heavy bottomed saucepan, mix together the strawberries, honey, lemon juice, orange zest, orange juice

STEP 3

Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C).

SHRIMP CEVICHE

Ingredients

One of my many favorite recipes. If you are having people over and don’t know what to make or do not want to spend hours cooking, this is your recipe and your guests will absolutely love it! Have some homemade tortillas, mexican rice, and your meal is complete!

STEP 1

Boil the tomatoes with the chipotle pepper.

STEP 2

Chop the onion.

STEP 3

Warm up a skillet, add avo oil and saute the onion until it is translucent.

STEP 4

In a blender add the tomatoes, chipotle pepper, crema, oaxaca cheese, salt, cilantro, garlic and coconut aminos. Blend until the mixture is smooth.

STEP 5

Transfer mixture to the skillet with the saute onion, bring to a low simmer, reduce the heat to low and cook uncovered for 15 min.

STEP 6

Add the clean and deveined shrimp and let it cook for a few minutes.

STEP 7

Add more cheese and crema if desired.

ASIAN SALMON

Ingredients

Salmon

3 tbs Sesame seed oil

1-4 cups lemon juice

Grated Ginger

1/2 cup Coconut aminos

2 tbsp cup rice vinegar

Green onions

Sesame seeds

Dulce ( seaweed )

Avocado

Cabbage

Cucumber

Chipotle aioli.

1/2 dry chipotle peppers

½ cup plain greek yogurt

Salt

Pepper

Directions

I want to share with you a delicious dinner I made the other day and now I’m obsessed. I have a hate/love relationship with salmon and that day I was craving something different and my son really loved it, hope you do too.

Instructions:

STEP 1

In a bowl combine sesame oil, lemon juice, coconut aminos, rice vinegar, green onions, grated ginger, and marinate the salmon.

STEP 2

Bake the salmon for 30 min at 350 F.

STEP 3

In the meantime, slice cabbage with a mandolin, and cut cucumbers, add some sesame seed oil.

STEP 4

When the salmon is done, sprinkle on top sesame seeds and dulce seaweed.

Complement it with a delicious Chipotle aioli.

STEP 5

Boil chipotle peppers until they are soft.

STEP 6

In a food processor, blend the yogurt, chipotle peppers (do not use the water) until everything is incorporated.
