GOAT CHEESE CHILE MORITA

Ingredients

2-4 dry Chile morita (depending on how spicy you want)

4 roma tomatoes

4 cloves of garlic

1/4 onion

1 cup Raw honey

Sesame seeds

Goat cheese

Directions

I like to make easy appetizers when I entertain, this Goat cheese with Chile morita honey and toasted sesame seeds is delicious and super easy to make. I had my family over and everyone raved about it. So I’m sharing this recipe with you again.

STEP 1

Boil the chiles morita until they are hydrated and soft.

STEP 2

Sauté with avocado oil the onions, tomatoes, and garlic and blend it.

STEP 3

Mix the tomato paste with raw honey.

STEP 4

Toast the sesame seeds on a hot skillet.

STEP 5

Add the Chile morita honey on top of the goat cheese and sprinkle sesame seeds.

GUACAMOLE

Ingredients

Ripe avocado

Tomatoes

Onion

Cilantro

Serrano pepper

Everyone’s favorite: GUACAMOLE.

Such an easy dish, but not everyone can make it right. The key of a good guacamole is to use fresh ingredients, the right ripe avocado and to not over mash it.

Do you know how to choose the right avocado? It should be firm but a little soft to the touch. There are so many myths about how to prevent it from turning brown (add lemon, put the pit in water, add the pit to the guacamole etc,) truth is, you need to eat it right away!

STEP 1

Chop onions, tomatoes, serrano peppers and cilantro. Mash the avocado, add salt and mix all ingredients. Enjoy with chips or chicharrones.

CHAMOY

Ingredients

1/2 cup Jamaica

5 Apricots

5 prunes

1 lemon

1/2 orange

3 tbsp Honey

Chili powder

Directions

Chamoy is a sauce with many flavors! It is sweet and tangy and tart all at the same time. In Mexico, we usually eat it with fruit. If you go to the store you will find many different brands. I like to make my own because it’s so easy to make, plus I like to make it healthier. If you make it, let me know what you think of it!

STEP 1

Boil the jamaica with the apricots and prunes once the fruit is soft.

STEP 2

Put it in a food processor, add the honey, lemon, orange and chilli powder, blend until it is perfectly mixed. (Add more honey or chili if needed)

You can enjoy it with fruit or put it in the rim of a glass and make yourself a margarita!

BOWL DE JICAMA

Whole Jicama

Lemon

Chili powder

Have you ever had Jicama before? it’s getting very popular in the states! In my hometown we eat it as a snack with tons of lemon, pineapple vinegar, chili powder and cheese (queso enchilado) and there are many different presentations for it. Jicama is a root vegetable and has a nutty flavor. You can also add it to saladas or even cook it. Here is one way of enjoying it.

STEP 1

Peal the jicama with a sharp knife

STEP 2

Cut a slice on the bottom, so it can stand up.

STEP 3

Now, we are going to make a bowl out of the jicama, start making a whole and removing jicama pieces and chop them in small pieces, you are going to fill the jicama bowl up with it.

STEP 4

Add lots of lemon, chili powder, salt and cheese. You can also add some peanuts for decoration.
