
09 Jun CALDO DE CAMARÓN
Ingredients
2tbs avocado oil
4 roma tomatoes
2 chile de árbol
2 guajillo pepper
1 tsp chili powder
1/2 onion
3 cloves of garlic
1/2 cup dry shrimp
1/2 cup fresh whole shrimp with skin on (this gives it more flavor)
2 potatoes
3 carrots
5 cups of water
Directions
I was craving this caldo on a cold rainy day but didn’t have all the ingredients, so I used what I had in my kitchen and it came out better than the original recipe I had! So I’m sharing my new recipe with you. Get ready to have the best caldo ever, I like to make it spicy, so if you don’t like it spicy add less Chile de árbol. Eat the caldo with saltines or tostadas.
STEP 1
Clean and devein the dry peppers.
STEP 2
Warm up a pot with avocado oil, then add the peppers, chopped tomatoes, chopped onions and garlic; sautéed until soft. Add 1 cup of water and let it boil on low heat, and then add salt.
STEP 3
Place in the blender the tomato and pepper mix (I like to use my all time fave: @vitamix) with the heads of dry shrimp.
STEP 4
Return the blended liquid into the pot, add 4 cups of water, potatoes, carrots, dry shrimp and fresh shrimp.
STEP 5
Cover and let it simmer on low heat for 20 min.
And that’s all! Serve warm with some drops of lemon juice and saltines or tostadas on the side.
