ENFRIJOLADAS

Ingredients

Beans

Tortillas

Crema

Cheese (queso fresco or cotija)

Avocado (optional)

Directions

This is a great vegetarian  meal, or if you need some protein add chicken inside. As a kid I loved enfrijoladas for dinner or breakfast and now they are my son’s favorites!

STEP 1

In a blender, add the beans with their broth and blend until the bean sauce is silky smooth.

STEP 2

Heat a medium pot or skillet over medium-high heat. Add the olive oil and pour in the bean sauce. Cook, stirring frequently, until the mixture is hot, do not let it boil (If the sauce ever gets too thick, simply add some water or broth and mix it in).

STEP 3

Heat up the corn tortillas on a skillet on both sides until warm and pliable.

STEP 4

To assemble the enfrijoladas, dip each tortilla into the bean sauce. Transfer tortilla to a plate. Roll it up like an enchilada or fold it over like a taco, add crema, cheese and avocado.

STEP 5

Serve immediately and add salsa if desired.
