Ingredients
5 tomatillos
1/4 onion
1 chile guajillo, cleaned and deveined
1 garlic
Salt
Cream
Oaxaca cheese
Cotija cheese
Cilantro
Avocado
Chips
Directions
Chilaquiles 🌶 One of the most popular breakfasts in Mexico, loved by kids and adults. You can add chicken or sunny side up eggs as well. You can also make them with a green sauce but this time we are making them with a delicious red sauce.
STEP 1
Grill the guajillo pepper from both sides.
STEP 2
Boil the tomatillos (don’t let them burst, otherwise they turn bitter) when they change color, they are ready.
STEP 3
Add the guajillo pepper with the tomatillos so it can hydrate.
STEP 4
Add to the blender the tomatillos , guajillo pepper, onion, garlic and salt and blend until smooth.
STEP 5
Warm avocado oil in a skillet, add the sauce and let it boil, when it changes color, add the oaxaca cheese, mix it and let the cheese melt, then add the crema and mix it.
STEP 6
Put in the chips and cover them with enough sauce.
STEP 7
Serve immediately on a bowl, add more crema, avocado, cotija cheese and cilantro for garnish.
