CALDO DE POLLO

Ingredients

Chicken

1 onion

10 cloves of garlic

Big bunch of cilantro

Big bunch of epazote

Piece of ginger

2 bay leaves

1 clove

A big bunch of peppercorns

Directions

This is the best chicken broth you will ever have, not only do I say so, but also Tümü customers. I use a variety of herbs and spices. The secret is to let it simmer for hours on low and to use a lot of the ingredients . The epazote is a key ingredient also.
STEP 1
Fill a pot with water. Wash and rinse the chicken.
STEP 2
I like to put the spices in a tea bag, so when it’s done I just throw it out and I don’t have to use a colander, also the peppercorns get stuck in the chicken.
STEP 3
Add the bunch of cilantro, epazote and onion.
STEP 4
Let it boil in low for 2 hrs or until your chicken is soft.
