16 Aug Cauliflower “cream” soup
Ingredients
1 medium head of cauliflower
32 oz vegetable/chicken broth
1/2 onion
2 leeks
2 garlic cloves
Salt and pepper
Pine nuts, cilantro (optional for decoration)
Salt
Avocado oil
Directions
A healthy option for lunch or dinner. This soup is so creamy, you won’t believe it’s dairy free!
STEP 1
Warm up your heavy pan and add a couple of tablespoons of avocado oil.
STEP 2
Sautee the onions and leeks till they are translucent.
STEP 3
Chop the cauliflower in small pieces and add them to the onions.
STEP 4
Sauté cauliflower for a minute and then add the garlic, broth and salt.
STEP 5
Cover your pan and let the cauliflower cook in slow flame till it’s tender.
STEP 6
Once cauliflower is tender, add to the blender and blend till smooth.
STEP 7
Return the blended mixture to the hot pan,keep steering, do not let it boil or the starch will break down and the soup will be lumpy. Steer for a few minutes so all the flavors can incorporate. The soup should be silky and creamy! Enjoy! 😋
