Ingredients
Tomatoes
Chipotle
Onion
Oaxaca Cheese
Coconut Aminos
Crema
Cilantro
Avo oil
Garlic
Salt
Directions
One of my many favorite recipes. If you are having people over and don’t know what to make or do not want to spend hours cooking, this is your recipe and your guests will absolutely love it! Have some homemade tortillas, mexican rice, and your meal is complete!
STEP 1
Boil the tomatoes with the chipotle pepper.
STEP 2
Chop the onion.
STEP 3
Warm up a skillet, add avo oil and saute the onion until it is translucent.
STEP 4
In a blender add the tomatoes, chipotle pepper, crema, oaxaca cheese, salt, cilantro, garlic and coconut aminos. Blend until the mixture is smooth.
STEP 5
Transfer mixture to the skillet with the saute onion, bring to a low simmer, reduce the heat to low and cook uncovered for 15 min.
STEP 6
Add the clean and deveined shrimp and let it cook for a few minutes.
STEP 7
Add more cheese and crema if desired.
